Ingredients

2 cups all-purpose flour

1 tablespoon baking powder

1/2 teaspoon baking soda

1 teaspoon salt

1/4 cup unsalted butter, chilled and cubed

3/4 cup buttermilk

1 pound thinly sliced roast beef

1 cup beef broth

1 cup shredded mozzarella cheese (or provolone)

1 tablespoon Worcestershire sauce

Fresh herbs (like thyme or rosemary) for garnish (optional)

Instructions

Prepare the Biscuit Dough: In a large mixing bowl, whisk together the flour, baking powder, baking soda, and salt. Cut in the chilled butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs. Make a well in the center and pour in the buttermilk. Stir until just combined.

Shape the Biscuits: Turn the dough onto a floured surface and gently knead it 2-3 times until it comes together. Pat out to about 1-inch thick. Using a biscuit cutter or a floured glass, cut out biscuits and place them on a baking sheet lined with parchment paper.

Bake the Biscuits: Preheat your oven to 425°F (220°C). Bake the biscuits for 12-15 minutes or until golden brown. Remove from the oven and let cool slightly.

Prepare the Roast Beef and Broth: In a medium saucepan, combine the beef broth, Worcestershire sauce, and heat over medium-low until warmed through. Add the sliced roast beef, allowing it to soak in the broth for a couple of minutes to warm.

Assemble the French Dip Biscuits: Slice the biscuits in half horizontally. Place a generous portion of warm roast beef on the bottom half of each biscuit, then top with mozzarella cheese. Place the muffin tops back on.

Finishing Touch: Return the assembled biscuits to the oven briefly, just until the cheese is melted (about 3-5 minutes).

Serve: Serve the biscuits warm, alongside a small bowl of the warm beef broth for dipping. Garnish with fresh herbs if desired. Enjoy your French Dip Biscuits!
