2 boneless, skinless chicken breasts

3 large onions, thinly sliced

3 cloves garlic, minced

2 cups low-sodium chicken broth

1 cup heavy cream

12 oz fettuccine pasta

1 tablespoon olive oil

2 tablespoons unsalted butter

1 cup grated Gruyère cheese

1 cup grated Parmesan cheese

1 teaspoon dried thyme

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the fettuccine pasta according to package instructions until al dente. Drain and set aside.

    Sauté the Onions: In a large skillet, heat the olive oil and butter over medium heat. Add the sliced onions and cook, stirring occasionally, for about 15-20 minutes, or until they are caramelized and lightly browned.

      Add Garlic: Stir in the minced garlic and cook for an additional 2-3 minutes until fragrant.

        Cook the Chicken: Push the onions to the side of the skillet and add the chicken breasts. Season with salt and pepper on both sides. Cook for about 6-8 minutes per side, or until fully cooked through. Remove the chicken from the skillet and set it aside to rest.

          Make the Sauce: In the same skillet with the onions, pour in the chicken broth and bring to a simmer. Add the heavy cream, dried thyme, and additional salt and pepper to taste. Let it cook for about 5 minutes, allowing the sauce to thicken slightly.
