1 packet (about 1 oz) French onion soup mix

2 cups shredded cheddar cheese, divided

1 cup panko breadcrumbs

4 tablespoons unsalted butter, melted

Salt and pepper to taste

Fresh chives or parsley for garnish (optional)

Instructions

Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking dish.

In a large mixing bowl, combine frozen hash browns, sour cream, cream of chicken soup, and French onion soup mix. Stir until well combined.

Add 1 ½ cups of the shredded cheddar cheese to the bowl, along with salt and pepper (to taste). Mix thoroughly.

Pour the potato mixture into the prepared baking dish and spread it evenly.

In a separate bowl, mix the panko breadcrumbs with the melted butter. Stir until the breadcrumbs are evenly coated.

Sprinkle the breadcrumb mixture over the top of the potato dish, followed by the remaining ½ cup of shredded cheddar cheese.

Bake in the preheated oven for 45-50 minutes, or until the top is golden brown and bubbly.

Once baked, let the casserole sit for 5-10 minutes before serving.

Garnish with fresh chives or parsley if desired for an extra pop of color.
