2 pounds Yukon Gold potatoes, peeled and cubed

2 tablespoons butter

1 tablespoon olive oil

1 cup vegetable broth

1/2 cup heavy cream (or substitute with milk for a lighter option)

1 cup shredded Gruyère cheese (or Swiss cheese)

1 teaspoon garlic powder
