1 lb ground beef

1/2 lb ground pork

1 cup breadcrumbs

1/2 cup grated Parmesan cheese

1 large onion, finely sliced

2 cloves garlic, minced

1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)

1/2 cup beef broth

1/4 cup balsamic vinegar

1 tablespoon Worcestershire sauce

1 egg, beaten

Salt and pepper to taste

1 cup shredded Gruyère cheese

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Onions: In a large skillet over medium heat, melt 1 tablespoon of butter. Add the sliced onions and cook, stirring occasionally, for about 15-20 minutes until they are caramelized (golden brown and soft). Add the minced garlic during the last 2 minutes of cooking and stir well. Remove from heat and set aside to cool slightly.

    Mix the Meatball Ingredients: In a large mixing bowl, combine the ground beef, ground pork, breadcrumbs, grated Parmesan, thyme, and cooked onions (make sure they've cooled a bit). Add the beaten egg, Worcestershire sauce, and season with salt and pepper. Mix everything together until just combined (don’t overmix).

      Form the Meatballs: Preheat your oven to 400°F (200°C). With your hands, shape the meat mixture into meatballs, about 1.5 inches in diameter and place them on a parchment-lined baking sheet.

        Bake the Meatballs: Bake the meatballs in the preheated oven for about 20 minutes or until they reach an internal temperature of 160°F (70°C).

          Make the French Onion Sauce: While the meatballs bake, return to the skillet and add the beef broth and balsamic vinegar to the caramelized onions. Bring to a simmer and let it reduce by half, about 5-7 minutes.

            Combine: Once the meatballs are done, add them to the skillet with the onion sauce. Gently toss to coat the meatballs in the sauce and let them simmer together for an additional 5 minutes.

              Serve: Place meatballs on a platter or individual plates, sprinkle with shredded Gruyère cheese, and put under the broiler for 2-3 minutes until the cheese is melted and bubbly.

                Garnish and Enjoy: Remove from the oven, garnish with freshly chopped parsley, and serve immediately.
