1 lb ground beef

1/2 lb ground pork

1 large yellow onion, finely chopped

1 cup French onion soup (canned or homemade)

1/2 cup breadcrumbs

2 cloves garlic, minced

1 large egg

1 tablespoon Worcestershire sauce

1/2 teaspoon dried thyme

1/2 teaspoon dried parsley

Salt and black pepper, to taste

1 cup shredded Gruyère cheese (for topping)

Fresh chives, for garnish

Instructions
 

Preheat your oven to 350°F (175°C).

    In a skillet over medium heat, melt a tablespoon of butter and add the chopped onion. Sauté for 10-12 minutes, or until the onions are caramelized and golden brown. Stir occasionally to prevent burning. Remove from heat and let cool slightly.

      In a large mixing bowl, combine the ground beef, ground pork, sautéed onions, breadcrumbs, minced garlic, egg, Worcestershire sauce, thyme, parsley, salt, and pepper. Mix until just combined; be careful not to overmix, or the meatloaf may become tough.

        Shape the meat mixture into a loaf and place it in a greased loaf pan. Brush a thin layer of French onion soup over the top for added flavor.

          Bake in the preheated oven for 45-55 minutes, or until the internal temperature reaches 160°F (70°C).

            During the last 10 minutes of baking, remove the meatloaf from the oven and sprinkle the shredded Gruyère cheese over the top. Return it to the oven and bake until the cheese is melted and bubbly.

              Once cooked, let the meatloaf rest for about 10 minutes before slicing. Garnish with fresh chives before serving.
