2 pounds baby potatoes, halved

2 large onions, thinly sliced

3 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon dried thyme

1 teaspoon sugar

Salt and pepper to taste

1 cup grated Gruyère cheese (or Swiss cheese)

1 tablespoon fresh parsley, chopped (for garnish)

Instructions
 

Preheat your oven to 400°F (200°C).

    In a large mixing bowl, toss the halved baby potatoes with 2 tablespoons of olive oil, salt, pepper, garlic powder, and dried thyme. Spread the potatoes in a single layer on a baking sheet.

      In a separate skillet, heat the remaining tablespoon of olive oil over medium heat. Add the sliced onions and sprinkle with sugar, sautéing until caramelized, about 15-20 minutes. Stir occasionally to prevent sticking and ensure even cooking.

        Once the onions are caramelized and golden brown, season with salt and pepper, then remove from heat.

          After 20 minutes of roasting, add the caramelized onions evenly over the potatoes on the baking sheet. Return to the oven and roast for another 15-20 minutes or until the potatoes are fork-tender.

            Remove the baking sheet from the oven and sprinkle the grated Gruyère cheese on top of the potatoes and onions. Return to the oven for an additional 5 minutes, or until the cheese is melted and bubbly.

              Remove from the oven and let it cool slightly before garnishing with fresh parsley.
