4 slices of thick-cut brioche bread

2 large eggs

1/2 cup milk

1 teaspoon vanilla extract

1/2 teaspoon cinnamon

1/4 teaspoon nutmeg

2 boneless, skinless chicken breasts

Salt and pepper to taste

1/2 cup all-purpose flour

1/2 cup breadcrumbs

1 teaspoon paprika

1/2 cup shredded cheddar cheese

2 tablespoons maple syrup (plus extra for serving)

Butter for cooking

Optional toppings: arugula or spinach, sliced tomatoes, and avocado

Prepare the Chicken: Season the chicken breasts with salt, pepper, and paprika. Dredge each breast in flour, dip into the beaten eggs (whisked with a pinch of salt), and then coat with breadcrumbs. Press the breadcrumbs onto the chicken for an even coating.

    Cook the Chicken: Heat a skillet over medium heat and add butter. Once melted, add the breaded chicken breasts and cook for about 5-7 minutes on each side until golden brown and cooked through. The internal temperature should reach 165°F (75°C). Remove from heat and let rest.

      Make the French Toast Mixture: In a shallow bowl, whisk together the eggs, milk, vanilla extract, cinnamon, and nutmeg.

        Prepare the French Toast: In the same skillet used for the chicken, add more butter if needed. Dip each slice of brioche into the egg mixture, ensuring both sides are coated. Cook the bread slices for 2-3 minutes on each side until golden brown.

          Assemble the Sandwich: On one slice of French toast, layer a piece of the cooked chicken, sprinkle with shredded cheddar, drizzle with maple syrup, and add any optional toppings like arugula, tomato slices, or avocado. Top with another slice of French toast.

            Press & Serve: Gently press the sandwich down, cut in half if desired, and serve warm. Drizzle additional maple syrup on top before serving.
