2 cups all-purpose flour

1/3 cup granulated sugar

1 tablespoon baking powder

1/2 teaspoon salt

1/2 cup cold unsalted butter, cubed

3/4 cup heavy cream

1 large egg

1 teaspoon vanilla extract

1 cup fresh strawberries, hulled and diced

1 egg wash (1 egg beaten with 1 tablespoon water, for brushing)

Instructions
 

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt until well combined.

      Add the cold, cubed butter to the dry ingredients. Using a pastry cutter or your fingertips, work the butter into the flour mixture until it resembles coarse crumbs.

        In a separate bowl, whisk together the heavy cream, egg, and vanilla extract until smooth.

          Pour the wet ingredients into the dry mixture, stirring gently until just combined. Be careful not to overmix.

            Fold in the diced strawberries until evenly distributed throughout the dough.

              Turn the dough out onto a floured surface and gently knead it just a few times to bring it together. Pat the dough into a circle about 1 inch thick.

                Cut the dough into 8 wedges and place them on the prepared baking sheet. Brush each scone with the egg wash for a nice golden finish.

                  Bake in the preheated oven for 15-18 minutes or until the scones are lightly golden on top and a toothpick inserted into the center comes out clean.

                    Remove the scones from the oven and let them cool on a wire rack for about 5 minutes before serving.
