1 lb boneless chicken thighs

1 cup buttermilk

1 cup all-purpose flour

1 teaspoon paprika

1 teaspoon garlic powder

½ teaspoon onion powder

½ teaspoon cayenne pepper (optional for heat)

Salt and pepper to taste

Oil for frying (vegetable or peanut oil)

12 small slider buns

½ cup mayonnaise

2 tablespoons Dijon mustard

1 cup pickles (sliced)

Lettuce leaves (for garnish)

Instructions
 

Marinate the Chicken: In a bowl, combine chicken thighs and buttermilk. Mix well, ensuring the chicken is fully coated. Cover and refrigerate for at least 1 hour, or overnight for best results.

    Prepare the Coating: In a separate bowl, mix together the flour, paprika, garlic powder, onion powder, cayenne pepper, salt, and pepper.

      Heat the Oil: In a deep skillet or pot, heat about 2 inches of oil over medium-high heat until it reaches 350°F (175°C).

        Coat the Chicken: Remove the chicken from the buttermilk marinade, allowing any excess to drip off. Dredge each piece of chicken in the flour mixture, ensuring an even coating.

          Fry the Chicken: Carefully place the coated chicken thighs in the hot oil, frying in batches to avoid overcrowding. Fry for about 5-7 minutes on each side or until golden brown and cooked through (internal temperature should reach 165°F / 75°C). Drain on paper towels.

            Prepare the Sauce: In a small bowl, mix together mayonnaise and Dijon mustard.

              Assemble the Sliders: Slice the slider buns in half. Spread a layer of the mayo-Dijon sauce on the bottom half of each bun. Place a piece of the fried chicken on top, followed by a slice of pickle and a leaf of lettuce. Top with the other half of the bun.
