Ingredients
  

2 fresh cod fillets (about 6 ounces each)

1 cup all-purpose flour

1 cup cornmeal

1 teaspoon paprika

1 teaspoon garlic powder

1/2 teaspoon cayenne pepper (optional, for spice)

1 teaspoon salt

1/2 teaspoon black pepper

1 cup buttermilk

1 tablespoon lemon juice

Vegetable oil (for frying)

4 brioche buns

1 cup coleslaw (store-bought or homemade)

1/2 cup tartar sauce

Fresh dill pickles (optional, for garnish)

(Optional) lettuce and tomato slices for serving

Instructions
 

Marinate the Fish: In a bowl, mix the buttermilk and lemon juice. Submerge the cod fillets in this mixture and let marinate for at least 30 minutes in the refrigerator.

    Prepare the Breading: In a shallow dish, combine the flour, cornmeal, paprika, garlic powder, cayenne pepper, salt, and black pepper.

      Coat the Fish: Remove the cod fillets from the marinade, allowing excess buttermilk to drip off. Dredge each fillet in the flour-cornmeal mixture, pressing lightly to ensure a good coating. Shake off any excess.

        Heat the Oil: In a large, deep skillet or pot, heat about 1 inch of vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test it by dropping in a small piece of bread; it should sizzle immediately.

          Fry the Cod: Carefully add the coated cod fillets to the hot oil. Fry for about 4-5 minutes on each side or until golden brown and cooked through. Remove and place on paper towels to drain excess oil.

            Assemble the Sandwich: Lightly toast the brioche buns. Spread a generous layer of tartar sauce on the bottom half of each bun. Place a fried cod fillet on top, followed by a scoop of coleslaw. Add lettuce and tomato if desired, and top with the other half of the bun.
