1 fresh pineapple, peeled and cut into ½-inch rings

½ cup all-purpose flour

¼ cup cornstarch

1 teaspoon baking powder

¼ teaspoon salt

½ cup coconut milk

1 teaspoon vanilla extract

½ cup shredded coconut (sweetened or unsweetened)

½ cup vegetable oil for frying

Prepare the Pineapple: Cut the fresh pineapple into rings using a sharp knife. Make sure to cut them evenly and remove the core in the center of each ring.

    Mix Dry Ingredients: In a mixing bowl, combine the all-purpose flour, cornstarch, baking powder, and salt. Whisk together until well blended.

      Prepare the Batter: In another bowl, whisk together the coconut milk and vanilla extract. Gradually add the wet ingredients to the dry ingredients, stirring until just combined. The batter should be thick and slightly lumpy.

        Coat Coconut: Place the shredded coconut on a plate. Dip each pineapple ring into the batter, allowing excess batter to drip off, then gently press it into the shredded coconut to coat.
