1 cup fresh pineapple, diced

1/2 cup bell peppers, diced (red and yellow for color)

1/2 cup frozen peas

2 green onions, sliced (whites and greens separated)

2 cloves garlic, minced

1 tablespoon ginger, minced

2 tablespoons soy sauce

1 tablespoon sesame oil

1 tablespoon vegetable oil

2 large eggs, beaten

Salt and pepper to taste

A handful of cilantro, for garnish

Preparation: If using freshly cooked rice, spread it on a baking sheet and let it cool. This helps prevent clumping in the frying process.

    Cook the Eggs: In a large skillet or wok, heat vegetable oil over medium heat. Add the beaten eggs and scramble until fully cooked. Remove the eggs from the skillet and set aside.
