2 tablespoons cumin seeds

2 tablespoons coriander seeds

1 tablespoon black peppercorns

1 tablespoon cardamom pods

1 tablespoon cloves

1 small cinnamon stick

1 teaspoon nutmeg, freshly grated

1 tablespoon dried bay leaves, crumbled

Instructions
 

In a dry skillet over medium heat, toast the cumin seeds for about 2-3 minutes or until they become fragrant. Stir frequently to avoid burning.

    Add the coriander seeds and black peppercorns to the skillet and continue to toast for another 2-3 minutes until the spices are fragrant and slightly darker.

      Next, add the cardamom pods, cloves, and the cinnamon stick into the skillet. Toast for an additional 2 minutes, stirring continuously.

        Remove the skillet from heat and allow the spices to cool.

          Once cooled, transfer all the toasted spices to a spice grinder or a mortar and pestle.

            Add the freshly grated nutmeg and crumbled bay leaves to the mix. Grind the spices until a fine powder is achieved. This may take a few minutes and a few shakes of the grinder to ensure even grinding.

              Store the garam masala in an airtight container in a cool, dark place; it will retain its flavors for up to 6 months.
