Ingredients
  

20 large pasta shells

2 cups fresh spinach, chopped

1 cup ricotta cheese

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

4 cloves garlic, minced

1 teaspoon olive oil

1/2 teaspoon red pepper flakes (optional)

1 teaspoon Italian seasoning

Salt and pepper to taste

2 cups marinara sauce

Fresh basil, for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Pasta Shells: In a large pot of salted boiling water, cook the pasta shells according to package instructions until al dente. Drain and set aside.

      Sauté the Spinach and Garlic: In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant. Add chopped spinach and cook until wilted, about 2-3 minutes. Season with salt, pepper, and red pepper flakes (if using). Remove from heat and let cool.

        Prepare the Filling: In a large bowl, combine the cooked spinach and garlic mixture with ricotta cheese, half of the mozzarella cheese, grated Parmesan cheese, Italian seasoning, and additional salt and pepper. Mix well until everything is fully incorporated.

          Stuff the Pasta Shells: Spread a thin layer of marinara sauce on the bottom of a 9x13 inch baking dish. Take each cooked pasta shell and fill it generously with the spinach and cheese mixture. Place the stuffed shells in the baking dish, opening side up.

            Add Sauce and Cheese: Once all shells are stuffed, pour remaining marinara sauce over the top. Sprinkle the rest of the mozzarella cheese over the sauce.

              Bake: Cover the baking dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes until the cheese is bubbly and golden brown.

                Garnish and Serve: Remove from the oven and let it cool for a few minutes. Garnish with fresh basil before serving.
