Ingredients

1 lb (450g) chicken breast, cut into bite-sized pieces

4 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

1 teaspoon fresh parsley, chopped (for garnish)

½ teaspoon red pepper flakes (optional, for heat)

Salt and pepper to taste

Juice of ½ lemon

Zest of 1 lemon

Instructions

Season the Chicken: In a large bowl, season the chicken pieces with salt, pepper, red pepper flakes (if using), and lemon zest. Toss to coat evenly.

Melt the Butter: In a large skillet, melt the butter over medium-high heat until bubbly.

Cook the Chicken: Add the seasoned chicken bites to the skillet in a single layer. Cook for about 5-7 minutes, turning halfway through, until golden brown and cooked through (internal temperature should reach 165°F or 74°C).

Add Garlic: Once the chicken is cooked, push it to one side of the skillet. Add the minced garlic to the empty side and sauté it for about 30 seconds until fragrant, taking care not to burn it.

Combine Ingredients: Stir the garlic into the chicken and sprinkle in the fresh thyme. Squeeze the lemon juice over the chicken and mix well to combine all the flavors.

Garnish and Serve: Remove the skillet from heat, garnish with chopped parsley, and serve immediately with your choice of sides, like rice, pasta, or a fresh salad.
