Instructions
Preheat your oven to 400°F (200°C).
Pat the chicken thighs dry with paper towels, then season both sides generously with salt, pepper, smoked paprika, and dried thyme.
In an oven-safe skillet, melt 2 tablespoons of butter over medium-high heat.
Once the butter has melted and is bubbly, add the chicken thighs skin-side down. Sear for about 4-5 minutes until the skin is crispy and golden brown.
Flip the chicken thighs over, then add the minced garlic to the skillet, spreading it around the chicken.
Add the remaining butter and squeeze the lemon juice over the chicken, then transfer the skillet to the preheated oven.
Roast the chicken for 20-25 minutes or until the internal temperature reaches 165°F (75°C).
Remove from the oven and rest for 5 minutes. Sprinkle with fresh parsley before serving.
