Ingredients

300g spaghetti or your preferred pasta

6 tablespoons unsalted butter

6 cloves garlic, minced

1/4 teaspoon red pepper flakes (optional)

1 cup fresh cherry tomatoes, halved

1 cup baby spinach

1/2 cup grated Parmesan cheese

1/4 cup fresh basil, chopped

Salt and pepper to taste

Zest of 1 lemon

Juice of 1/2 lemon

Instructions

Cook the Pasta: In a large pot of salted boiling water, cook the spaghetti according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.

Prepare the Garlic Butter: In a large skillet over medium heat, melt the butter. Add the minced garlic and red pepper flakes (if using) and sauté for about 2-3 minutes until fragrant but not browned.

Add Tomatoes and Spinach: Stir in the halved cherry tomatoes and cook for another 2-3 minutes, allowing them to soften. Add the baby spinach and mix until wilted.

Combine Pasta and Sauce: Add the cooked pasta to the skillet and toss to coat in the garlic butter mixture. If needed, drizzle in a bit of reserved pasta water to help combine and create a silky sauce.

Finish the Dish: Stir in the grated Parmesan cheese, lemon zest, and lemon juice. Mix thoroughly. Season with salt and pepper to taste.

Serve: Plate the pasta and garnish with freshly chopped basil on top.
