4 tablespoons butter

4 cloves garlic, minced

1 teaspoon fresh thyme leaves (or ½ teaspoon dried)

1 lemon (zested and juiced)

1 can (15 oz) white beans (cannellini or navy), drained and rinsed

2 cups baby spinach

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Prepare the Salmon: Pat the salmon fillets dry with paper towels and season both sides with salt and pepper.

    Make Garlic Butter: In a large skillet over medium heat, melt 2 tablespoons of butter. Add minced garlic and thyme, cooking until fragrant (about 1 minute).

      Cook the Salmon: Increase the heat to medium-high and add the salmon, skin-side down. Cook for 4-5 minutes without moving, until golden and cooked halfway through.
