8 large shrimp, peeled and deveined

3 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon paprika

Salt and pepper to taste

4 slices of sourdough bread

1 cup grated cheddar cheese

1 cup grated mozzarella cheese

1 tablespoon fresh parsley, chopped (for garnish)

2 tablespoons olive oil

Prepare the Shrimp: In a skillet, melt 2 tablespoons of butter over medium heat. Add minced garlic and sauté for 30 seconds until fragrant.

    Cook the Shrimp: Add the shrimp, paprika, salt, and pepper to the skillet. Cook for 2-3 minutes, until the shrimp turn pink and are cooked through. Remove the shrimp from the skillet and set aside.

      Toast the Bread: In the same skillet, add olive oil. Place two slices of sourdough bread in the skillet and sprinkle half of the cheddar and mozzarella cheese on top of each slice.

        Add the Shrimp: Distribute the cooked shrimp evenly on top of the cheese on both slices. Top with the remaining cheese and place the other two slices of sourdough bread on top to form sandwiches.

          Grill the Sandwiches: Carefully flip the sandwiches after about 3-4 minutes, pressing down gently with a spatula. Cook for another 3-4 minutes until the bread is golden brown and the cheese is melted.

            Add Garlic Butter: Once removed from the skillet, melt the remaining tablespoon of butter and brush over the top of the sandwiches.

              Garnish and Serve: Sprinkle chopped parsley over the sandwiches for a pop of color.
