For the Garlic Butter Steak Bites:

1 pound sirloin steak, cut into 1-inch cubes

4 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon fresh thyme leaves

1 teaspoon fresh rosemary, chopped

Salt and pepper to taste

For the Cheesy Smashed Potatoes:

1 pound baby Yukon Gold potatoes

1/2 cup cheddar cheese, grated

1/4 cup cream cheese, softened

2 tablespoons sour cream

2 tablespoons chives, chopped

Salt and pepper to taste

Olive oil for drizzling

Instructions
 

Prepare the Potatoes:

    - Boil the baby Yukon Gold potatoes in salted water for about 15-20 minutes until fork-tender. Drain and let cool slightly.

      Smash and Season:

        - On a baking sheet lined with parchment paper, place the boiled potatoes and use a fork or potato masher to gently smash each potato to about 1/2 inch thickness.

          - Drizzle with olive oil and season with salt and pepper. Bake in a preheated oven at 400°F (200°C) for 20 minutes until edges are crispy.

            Make the Cheesy Mixture:

              - In a bowl, combine the grated cheddar cheese, cream cheese, sour cream, and chopped chives. Mix until smooth and set aside.

                Cook the Steak Bites:

                  - While the potatoes are baking, heat a large skillet over medium-high heat. Add 2 tablespoons of butter.

                    - Once the butter is melted and bubbling, add the steak bites in a single layer. Season with salt and pepper. Cook for 2-3 minutes for medium-rare, flipping halfway through.

                      Add Garlic and Herbs:

                        - In the last minute of cooking, add the remaining butter, minced garlic, thyme, and rosemary to the skillet. Stir continuously, allowing the garlic to become fragrant but not brown, about 1-2 minutes.

                          Mix Cheesy Smashed Potatoes:

                            - After the potatoes have baked, remove them from the oven and spoon the cheesy mixture on top of each smashed potato. Return to the oven for another 5-7 minutes until melted and bubbly.

                              Serve:

                                - Once both components are ready, plate the garlic butter steak bites alongside the cheesy smashed potatoes.
