Garlic Butter Steak Bites and Cheesy Smashed Potatoes

1 lb sirloin steak, cut into bite-sized pieces

4 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon fresh rosemary, chopped

1 teaspoon fresh thyme, chopped

Salt and pepper to taste

1 lb baby potatoes

1 cup shredded cheddar cheese

½ cup sour cream

2 tablespoons chives, chopped (for garnish)

Instructions
 

Prepare the Potatoes: Place baby potatoes in a large pot and cover with water. Bring to a boil and cook for about 15-20 minutes or until fork-tender.

    Preheat Skillet: While the potatoes are cooking, heat a large skillet over medium-high heat.

      Cook Steak Bites: Season the steak pieces with salt and pepper. When the skillet is hot, add 2 tablespoons of butter. Once melted, add the steak bites in a single layer. Sear for about 2-3 minutes on each side until browned but still medium rare. Remove from the skillet and keep warm.

        Make Garlic Butter Sauce: In the same skillet, lower the heat to medium and add the remaining 2 tablespoons of butter, minced garlic, rosemary, and thyme. Sauté for about 1-2 minutes until fragrant.

          Combine Steak with Sauce: Add the cooked steak bites back to the skillet and toss to coat in the garlic butter sauce. Cook for an additional minute just to heat through.

            Smash Potatoes: Once the potatoes are cooked, drain them and return to the pot. Using a potato masher, gently smash the potatoes but do not fully mash them.

              Add Cheese and Sour Cream: Stir in shredded cheddar cheese and sour cream to the potatoes until well combined. Season with salt and pepper to taste.

                Serve: Plate up the cheesy smashed potatoes and top with the garlic butter steak bites. Drizzle any remaining garlic butter sauce from the skillet over the steak.
