1 lb sirloin steak, cut into 1-inch cubes

4 tablespoons unsalted butter, divided

4 cloves garlic, minced

1 teaspoon fresh thyme, chopped (or ½ teaspoon dried thyme)

1 teaspoon fresh rosemary, chopped (or ½ teaspoon dried rosemary)

Salt and black pepper, to taste

2 pounds Yukon gold potatoes, peeled and cubed

½ cup milk (or cream for a richer mash)

2 tablespoons sour cream (optional)

Chopped parsley, for garnish

Prep the Steak: Season the steak cubes generously with salt and pepper.

    Cook the Potatoes: In a large pot, boil the Yukon gold potatoes in salted water until tender, about 15-20 minutes. Drain and return to the pot.

      Make the Butter Blend: In a small saucepan, melt 2 tablespoons of butter over medium heat. Add minced garlic, thyme, and rosemary. Sauté for 2-3 minutes until fragrant, then remove from heat and set aside.

        Sear the Steak: In a large skillet over high heat, melt the remaining 2 tablespoons of butter. Once melted and sizzling, add the steak bites in a single layer, being careful not to overcrowd the pan. Sear for about 2-3 minutes on each side until browned.

          Combine: Pour the garlic butter mixture over the steak bites in the skillet. Stir to coat the steak in the flavorful butter and let it cook for an additional minute. Remove from heat.
