4 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)

1 tablespoon olive oil

2 cups potatoes, peeled and diced

1/2 cup heavy cream

1/4 cup sour cream

1/4 cup Parmesan cheese, grated

2 tablespoons chives, finely chopped

Cook the Potatoes: In a large pot, bring salted water to a boil. Add the diced potatoes and cook for 15-20 minutes or until fork-tender. Drain and return to the pot.
