Ingredients
  

1 lb sirloin steak, cut into bite-sized cubes

2 cups baby potatoes, halved

4 tablespoons unsalted butter

6 cloves garlic, minced

1 teaspoon fresh thyme, chopped

1 teaspoon fresh rosemary, chopped

Salt and pepper, to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat Oven: Preheat your oven to 400°F (200°C).

    Prepare Potatoes: In a large bowl, toss the halved baby potatoes with 1 tablespoon of olive oil, salt, and pepper. Spread them out on a baking sheet in a single layer.

      Roast Potatoes: Roast the potatoes in the preheated oven for about 20-25 minutes, or until they are tender and golden brown, flipping halfway through for even cooking.

        Sear Steak Bites: While the potatoes are roasting, heat the remaining olive oil in a large skillet over medium-high heat. Season the steak cubes generously with salt and pepper.

          Cook Steak: Add the steak bites to the skillet in a single layer. Sear for about 2-3 minutes per side until they are browned and cooked to your desired doneness (medium-rare is typically around 130°F to 135°F internal temperature). Remove the steak bites from the skillet and set aside.

            Make Garlic Butter: In the same skillet, reduce the heat to medium, and add the butter. Allow it to melt. Once melted, add the minced garlic, thyme, and rosemary. Sauté for about 1-2 minutes until fragrant, taking care not to burn the garlic.

              Combine: Return the steak bites to the skillet and toss gently to coat them in the garlic butter. Cook for an additional minute, allowing the flavors to meld.

                Serve: Once the potatoes are roasted, remove them from the oven and combine them with the garlic butter steak bites in a serving bowl. Garnish with fresh parsley before serving.
