1 lb sirloin steak, cut into bite-sized cubes

1 lb baby potatoes, halved

4 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon fresh rosemary, minced (or ½ teaspoon dried)

1 teaspoon fresh thyme leaves (or ½ teaspoon dried)

Salt and pepper to taste

2 tablespoons olive oil

Chopped fresh parsley for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C) to roast the potatoes.

    Prepare the Potatoes:

      - In a large bowl, toss the halved baby potatoes with olive oil, salt, and pepper.

        - Spread them in a single layer on a baking sheet and roast in the preheated oven for about 20 minutes, or until golden and tender, flipping halfway through.

          Season the Steak Bites:

            - While the potatoes are roasting, season the steak cubes generously with salt and pepper.

              Cook the Steak Bites:

                - In a large skillet, melt 2 tablespoons of butter over medium-high heat.

                  - Once the butter is bubbling, add the steak cubes in a single layer. Avoid overcrowding the pan; you may need to do this in batches.

                    - Sear the steak bites for about 2-3 minutes per side, or until nicely browned and cooked to your desired doneness. Remove them from the skillet and set aside.

                      Make the Garlic Butter Sauce:

                        - In the same skillet, add the remaining 2 tablespoons of butter.
