1 lb (450g) sirloin steak, cut into bite-sized pieces

1 lb (450g) baby red potatoes, halved

4 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon fresh rosemary, chopped

1 teaspoon fresh thyme, chopped

1 teaspoon smoked paprika

Salt and pepper to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Prepare the Potatoes: In a large pot, add the halved baby red potatoes and cover with water. Season with salt and bring to a boil. Cook for about 10-15 minutes, or until the potatoes are fork-tender. Drain and set aside.

    Sauté the Steak Bites: In a large skillet over medium-high heat, add the olive oil. Once hot, add the sirloin steak pieces, season with smoked paprika, salt, and pepper. Sear the steak bites for about 3-4 minutes, turning frequently until browned and cooked to your preferred doneness. Remove steak from the skillet and set aside.

      Make the Garlic Butter: In the same skillet, reduce the heat to medium, add the butter, and let it melt. Add the minced garlic, chopped rosemary, and thyme. Sauté for about 1-2 minutes until the garlic is fragrant but not browned.
