Garlic Butter Steak Bites with Crispy Cheddar Smashed Potatoes

Ingredients
  

1 lb sirloin steak, cut into 1-inch cubes

4 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon fresh thyme (or 1/2 teaspoon dried thyme)

Salt and pepper to taste

1 lb small potatoes (Yukon gold or baby potatoes)

1 cup shredded sharp cheddar cheese

1 tablespoon olive oil

Fresh parsley, chopped for garnish

Prepare the Potatoes: Place the small potatoes in a large pot, cover with water, and add a pinch of salt. Bring to a boil over high heat, then reduce to medium and simmer for about 15-20 minutes, or until fork-tender.

    Preheat the Oven: While the potatoes are cooking, preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.

      Smashed Potatoes: Once the potatoes are tender, drain them and allow to cool slightly. Transfer them to the prepared baking sheet and use the bottom of a glass or a potato masher to gently smash each potato until flattened. Drizzle with olive oil and season with salt and pepper.

        Cheesy Topping: Sprinkle the shredded cheddar cheese generously over each smashed potato and bake in the preheated oven for 20-25 minutes, or until the cheese is melted and crispy.

          Cook the Steak Bites: While the potatoes are baking, heat a large cast-iron skillet or non-stick pan over medium-high heat. Add 2 tablespoons of butter and allow it to melt.

            Sear the Steak: Season the steak cubes with salt and pepper. Once the butter is foamy, add the steak bites in a single layer (you may need to work in batches). Sear for about 2-3 minutes on each side until they're browned and cooked to your preferred level of doneness. Add the minced garlic and thyme to the skillet for the last minute of cooking, stirring to coat the steak bites in the garlicky butter.

              Combine and Serve: Once the steak bites are done, remove them from the heat and stir in the remaining 2 tablespoons of butter to add extra richness.
