Ingredients

8 oz (225g) egg noodles

1 lb (450g) steak (ribeye or sirloin), thinly sliced

4 tablespoons unsalted butter

5 cloves garlic, minced

1 tablespoon soy sauce

1 tablespoon oyster sauce

1 teaspoon chili paste (optional)

1 cup snap peas, trimmed

1 bell pepper, sliced (red or yellow for sweetness)

3 green onions, chopped

Salt and pepper to taste

Sesame seeds for garnish

Instructions

Cook the Noodles: In a large pot of boiling salted water, cook the egg noodles according to package instructions until al dente. Drain and rinse under cold water. Toss with a drizzle of oil to prevent sticking.

Prepare the Steak: Season the thinly sliced steak with salt and pepper.

Sear the Steak: In a large skillet or wok, melt 2 tablespoons of butter over medium-high heat. Add the steak slices in a single layer (do this in batches if necessary) and sear for about 2-3 minutes, flipping halfway through, until browned and cooked to your liking. Remove the steak from the skillet and set aside.

Sauté the Garlic: In the same skillet, add the remaining 2 tablespoons of butter. Once melted, add the minced garlic and sauté for 30 seconds until fragrant.

Add the Vegetables: Add the snap peas and sliced bell pepper to the skillet. Stir-fry for about 2-3 minutes, or until the veggies are tender-crisp.

Combine Everything: Return the steak to the skillet, along with the cooked noodles. Add the soy sauce, oyster sauce, and chili paste (if using). Toss everything together until well combined and heated through, about 2 minutes. Adjust seasoning with salt and pepper as needed.

Garnish: Sprinkle the chopped green onions and sesame seeds over the top before serving.

                  - Presentation Tips: Serve the noodles in a large bowl or plate and top with a few extra sesame seeds and green onions for color. Pair with lime wedges on the side for a zesty finish.
