Ingredients
  

4 boneless, skinless chicken thighs

6 cloves of garlic, minced

1 cup green olives, pitted and halved

1/2 cup Kalamata olives, pitted and halved

1 medium onion, finely chopped

1 cup cherry tomatoes, halved

1 teaspoon dried oregano

1 teaspoon smoked paprika

1/2 teaspoon red pepper flakes (optional)

1/4 cup olive oil

1/2 cup chicken broth

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Marinate the Chicken: In a bowl, combine the chicken thighs with half of the minced garlic, smoked paprika, oregano, salt, and pepper. Drizzle with olive oil and let marinate for at least 30 minutes (or up to overnight in the fridge for deeper flavor).

    Sauté the Aromatics: In a large skillet over medium heat, heat 2 tablespoons of olive oil. Add the remaining minced garlic and onion, sautéing until the onion becomes translucent and fragrant, about 5 minutes.

      Brown the Chicken: Remove the chicken from the marinade and add it to the skillet. Cook for 4-5 minutes on each side, until golden brown. You may need to do this in batches if your skillet isn't large enough. Remove the chicken and set aside.

        Add the Olives and Tomatoes: In the same skillet, add the green and Kalamata olives along with the cherry tomatoes. Stir and cook for about 3-4 minutes until the tomatoes begin to soften.

          Deglaze the Pan: Pour in the chicken broth, scraping the bottom of the skillet to release any browned bits. Bring to a simmer.

            Combine and Cook: Return the browned chicken thighs to the skillet, nestling them among the olives and tomatoes. Cover and let simmer for 20-25 minutes on low heat, until the chicken is cooked through and tender.

              Serve: Check for seasoning and adjust with more salt, pepper, or red pepper flakes if desired. Garnish with freshly chopped parsley before serving.

                Enjoy: Serve the garlic chicken with a side of crusty bread or over a bed of rice or couscous to soak up the delicious sauce.
