1 cup vegetable oil (such as canola or grapeseed)

10-12 cloves garlic, thinly sliced

2 tablespoons crushed red pepper flakes (adjust to taste)

1 teaspoon paprika (for color)

1 teaspoon sesame seeds (optional)

1 teaspoon salt

1 bay leaf

1 tablespoon fresh ginger, finely minced (optional)

Instructions
 

In a small saucepan, heat the vegetable oil over medium heat. Be careful not to let it smoke.

    Once the oil is warm (not boiling), add the sliced garlic. Stir constantly for 2-3 minutes, until the garlic turns golden brown. Watch closely to prevent burning.

      Reduce the heat to low, and add the crushed red pepper flakes, paprika, salt, and bay leaf. If using, add the minced ginger at this stage as well.

        Continue cooking on low for 3-4 minutes, allowing the flavors to infuse into the oil. You'll notice the oil turning a rich reddish color.

          Once everything is well combined and aromatic, remove the pan from heat. Let it cool completely at room temperature.

            Strain the oil through a fine-mesh sieve into a clean glass jar, discarding the garlic slices, bay leaf, and any sediment.

              If desired, sprinkle sesame seeds into the jar for added texture and flavor. Seal the jar tightly.
