Ingredients

2 cups garlic cloves, peeled

1 cup olive oil

2 sprigs fresh thyme (optional)

1 bay leaf (optional)

Salt to taste

Baguette, sliced into 1/2-inch thick pieces

Fresh parsley, chopped for garnish

Instructions

Preheat the oven to 200°F (93°C).

In a small baking dish or oven-safe pot, place the peeled garlic cloves.

Pour the olive oil over the garlic until fully submerged. If using, add the thyme and bay leaf for extra flavor.

Cover the dish tightly with aluminum foil and place it in the preheated oven.

Bake for 2 hours, or until the garlic is soft and golden but not browned. Keep a close eye on it as it cooks to avoid burning.

Once finished, remove from the oven and let it cool slightly. Season with salt to taste.

While the garlic is cooling, increase the oven temperature to 400°F (200°C).

Arrange the baguette slices on a baking sheet and drizzle lightly with olive oil.

Bake for about 8-10 minutes, flipping halfway through, until the crostini are golden and crispy.

To serve, place the garlic confit in a small dish adorned with fresh parsley. Serve the warm crostini on the side for dipping. Enjoy spreading the luscious garlic onto the crostini!
