Line a baking sheet with parchment paper or foil for easier cleanup. Spread the marinated shrimp in a single layer on the prepared baking sheet.
Roast the shrimp in the preheated oven for 8-10 minutes, or until they are pink and opaque, stirring halfway through to ensure even cooking.
Remove from the oven and garnish with chopped fresh parsley.
Serve the roasted shrimp warm with lemon wedges on the side for additional zest.
