Ingredients

500g mixed mushrooms (button, cremini, and shiitake), cleaned and sliced

4 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon fresh thyme, chopped (or ½ teaspoon dried thyme)

1 teaspoon fresh parsley, chopped (for garnish)

1 tablespoon soy sauce (optional for umami)

Salt and black pepper to taste

Juice of half a lemon

Instructions

In a large skillet, melt the butter over medium heat.

Add the minced garlic and sauté for about 30 seconds until fragrant, stirring continuously to avoid burning.

Add the mixed mushrooms to the skillet. Increase the heat to medium-high and cook for approximately 5-7 minutes, stirring occasionally, until the mushrooms are browned and have released their moisture.

Sprinkle in the chopped thyme, soy sauce (if using), salt, and pepper to taste. Stir well to combine the flavors.

Cook for an additional 2-3 minutes until the mushrooms are tender and well-coated in the garlic butter mixture.

Remove the skillet from the heat and squeeze the juice of half a lemon over the mushrooms. Mix gently.

Transfer the mushrooms to a serving dish and garnish with fresh parsley.
