Ingredients

1 pound ground chicken

1 cup breadcrumbs (preferably Italian seasoned)

1/2 cup grated Parmesan cheese

1/2 cup onion, finely chopped

3 cloves garlic, minced

1/4 cup fresh parsley, chopped

1 large egg

1/4 cup milk

1 teaspoon dried oregano

1 teaspoon salt

1/2 teaspoon black pepper

1/4 teaspoon red pepper flakes (optional)

1/2 cup marinara sauce (for topping)

Instructions

Preheat your oven to 350°F (175°C) and lightly grease a loaf pan.

In a large mixing bowl, combine the ground chicken, breadcrumbs, and grated Parmesan cheese.

Add the finely chopped onion, minced garlic, and fresh parsley to the mixture.

In a separate bowl, whisk together the egg and milk, then pour it over the chicken mixture.

Sprinkle in the dried oregano, salt, black pepper, and red pepper flakes (if using).

Using your hands, gently mix everything together until just combined—avoid overmixing to keep the meatloaf tender.

Transfer the mixture into the prepared loaf pan and shape it into a loaf.

Spread the marinara sauce evenly over the top of the meatloaf.

Bake in the preheated oven for 50-60 minutes, or until the internal temperature reaches 165°F (74°C).

Once cooked, remove from the oven and let it rest for about 10 minutes before slicing.
