1 lb boneless, skinless chicken breasts, cut into 1-inch cubes

3 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon dried Italian herbs (oregano, basil, thyme)

½ teaspoon paprika

½ teaspoon salt

¼ teaspoon black pepper

½ cup grated Parmesan cheese

2 tablespoons fresh parsley, chopped (for garnish)

Skewers (wooden or metal)

Instructions
 

If using wooden skewers, soak them in water for 20-30 minutes to prevent burning during grilling.

    In a large bowl, combine olive oil, minced garlic, dried Italian herbs, paprika, salt, and black pepper. Mix well to create a marinade.

      Add the cubed chicken to the marinade and mix until all the pieces are evenly coated. Let it marinate for at least 30 minutes (or up to 2 hours in the refrigerator for more flavor).

        Preheat the grill or grill pan over medium-high heat.

          Thread the marinated chicken cubes onto the skewers, leaving a little space between each piece for even cooking.

            Grill the skewers for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.

              During the last few minutes of grilling, sprinkle the grated Parmesan cheese over the skewers, allowing it to melt slightly.

                Remove the skewers from the grill and let them rest for a couple of minutes.

                  Garnish with chopped fresh parsley before serving.
