4 medium-sized russet potatoes

4 tablespoons unsalted butter, melted

4 cloves garlic, minced

1/2 teaspoon smoked paprika

1/4 teaspoon red pepper flakes (optional)

1/2 cup grated Parmesan cheese

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare the Potatoes: Wash and scrub the russet potatoes thoroughly. Pat them dry with a paper towel.

      Make Hasselback Cuts: Carefully slice each potato into thin, even slices (about 1/8 inch apart), stopping just before you cut all the way through, so the bottom remains intact. To make this easier, you can place a wooden spoon on either side of the potato while slicing to prevent cutting all the way through.

        Garlic Butter Mixture: In a mixing bowl, combine the melted butter, minced garlic, smoked paprika, red pepper flakes, and salt and pepper. Stir well to combine.

          Coat the Potatoes: Using a brush or spoon, generously coat each potato with the garlic butter mixture, making sure to get the mixture between the slices. Reserve a bit of the butter for later.

            Bake: Place the potatoes on a baking sheet lined with parchment paper. Bake in the preheated oven for about 30 minutes.

              Add Parmesan: After 30 minutes, remove the potatoes from the oven and sprinkle the grated Parmesan cheese generously over the tops and between the slices. Drizzle the remaining garlic butter on top.

                Continue Baking: Return the potatoes to the oven and bake for an additional 15-20 minutes, or until the potatoes are tender and the cheese is golden and crispy.

                  Garnish and Serve: Once done, remove the potatoes from the oven, sprinkle with fresh parsley, and add more grated Parmesan if desired.
