1 pound fresh baby bella mushrooms, cleaned and stems trimmed

3 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon dried thyme

½ teaspoon red pepper flakes (optional)

Salt and pepper, to taste

½ cup grated Parmesan cheese

2 tablespoons fresh parsley, chopped (for garnish)

Juice of half a lemon

Prepare the Mushrooms: Preheat your oven to 400°F (200°C). In a bowl, toss the cleaned mushrooms with olive oil, minced garlic, dried thyme, red pepper flakes (if using), salt, and pepper until they are well coated.

    Arrange for Baking: Spread the mushrooms in a single layer on a baking sheet lined with parchment paper. This ensures even cooking.

      Bake the Mushrooms: Place the baking sheet in the preheated oven and roast the mushrooms for about 15-20 minutes, or until they are tender and starting to brown. Stir them halfway through the cooking process to ensure they cook evenly.

        Add Parmesan: Remove the baking sheet from the oven and sprinkle the grated Parmesan cheese over the mushrooms. Return to the oven and bake for an additional 5-7 minutes, until the cheese is melted and bubbly.
