Ingredients
  

1 large head of cauliflower, cut into florets

4 cloves garlic, minced

1/4 cup olive oil

1/2 cup grated Parmesan cheese

1 teaspoon smoked paprika

1/2 teaspoon black pepper

1 teaspoon salt

2 tablespoons fresh parsley, chopped (for garnish)

Zest of 1 lemon

Instructions
 

Preheat your oven to 425°F (220°C).

    In a large mixing bowl, combine the cauliflower florets, minced garlic, olive oil, smoked paprika, salt, and black pepper. Toss until the cauliflower is well coated with the mixture.

      Spread the cauliflower in a single layer on a baking sheet lined with parchment paper.

        Roast in the preheated oven for 25 minutes, stirring halfway through to ensure even cooking.

          After 25 minutes, remove the baking sheet from the oven and sprinkle the grated Parmesan cheese over the roasted cauliflower.

            Return the baking sheet to the oven and roast for an additional 5-10 minutes, or until the cheese is melted and golden brown.

              Once done, remove from the oven and sprinkle with fresh parsley and lemon zest for an extra burst of flavor.

                Serve hot as a side dish or enjoy it as a light snack!
