Ingredients

1 lb large shrimp, peeled and deveined

4 cloves garlic, minced

3 tablespoons unsalted butter

2 tablespoons olive oil

1 tablespoon soy sauce

1 tablespoon honey

1 teaspoon fresh ginger, grated

1/2 teaspoon crushed red pepper flakes

Zest and juice of 1 lemon

2 green onions, chopped (for garnish)

Salt and pepper to taste

1 cup cooked jasmine rice (to serve)

Pineapple wedges (optional, for serving)

Instructions

In a large mixing bowl, combine the shrimp, soy sauce, honey, lemon zest, ginger, and crushed red pepper flakes. Toss well to coat and let marinate for about 15 minutes.

Heat the butter and olive oil together in a large skillet over medium heat until the butter melts and starts to foam.

Add the minced garlic and cook for about 1 minute, stirring frequently to avoid burning.

Increase the heat to medium-high, add the marinated shrimp to the skillet, and cook for 2-3 minutes on each side or until the shrimp turns pink and opaque.

Squeeze the lemon juice over the shrimp, season with salt and pepper to taste, and stir to combine.

Remove the skillet from heat and sprinkle with chopped green onions.

Serve the garlic shrimp over cooked jasmine rice, garnished with additional green onions and pineapple wedges if desired.
