Ingredients
  

1 medium head of cauliflower, cut into florets

8 oz (about 225g) mushrooms, sliced (cremini or button mushrooms work well)

4 tablespoons olive oil

5 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon dried thyme (or fresh thyme)

Salt and pepper to taste

2 tablespoons freshly squeezed lemon juice

Chopped fresh parsley for garnish (optional)

Instructions
 

Preheat Oven: Preheat your oven to 425°F (220°C).

    Prepare Veggies: In a large bowl, combine the cauliflower florets and sliced mushrooms.

      Make Garlic Oil: In a small bowl, whisk together the olive oil, minced garlic, smoked paprika, dried thyme, salt, and pepper.

        Combine: Pour the garlic oil mixture over the cauliflower and mushrooms. Toss everything together until the vegetables are well coated.

          Roast: Spread the mixture evenly on a large baking sheet lined with parchment paper. Make sure they are in a single layer for even roasting.

            Bake: Roast in the preheated oven for 25-30 minutes, or until the cauliflower is golden and tender, stirring halfway through.

              Finish: Once roasted, remove from the oven and drizzle with freshly squeezed lemon juice. Toss gently to combine.

                Serve: Transfer the roasted cauliflower and mushrooms to a serving platter, and sprinkle with chopped fresh parsley if desired. Enjoy warm!
