1 lb kielbasa sausage, sliced into ¼-inch rounds

1 small red onion, finely diced

3 tablespoons olive oil

3 tablespoons apple cider vinegar

1 teaspoon Dijon mustard

1 teaspoon granulated sugar

Salt and black pepper to taste

1/4 cup fresh parsley, chopped

4 slices of bacon, cooked and crumbled (optional for extra flavor)
