4 medium-sized potatoes, peeled and diced

1 large onion, finely chopped

2 cloves garlic, minced

3 cups vegetable or chicken broth

1 cup heavy cream or plant-based cream alternative

1 carrot, diced

2 stalks celery, chopped

1 teaspoon dried thyme

1 bay leaf

2 tablespoons olive oil

Salt and pepper to taste

Fresh chives, finely chopped for garnish

Optional: Croutons or crispy bacon bits for topping

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until translucent, about 4-5 minutes.

    Add the diced potatoes, carrot, and celery to the pot, stirring to combine the vegetables. Cook for an additional 5 minutes.

      Pour in the vegetable or chicken broth and add the thyme and bay leaf. Bring the mixture to a boil, then reduce the heat to a simmer.

        Cover the pot and let it simmer for about 20-25 minutes, or until the potatoes and vegetables are tender.

          Remove the bay leaf and use an immersion blender to puree the soup until it reaches your desired consistency, either smooth or chunky.

            Stir in the heavy cream and season with salt and pepper to taste. Heat the soup gently until warmed through, but do not boil.

              Serve the soup hot, garnished with fresh chives and, if desired, topped with croutons or crispy bacon bits for extra flavor and texture.
