Instructions
In a large pot, combine the apple cider and water over medium heat.
Add the grated fresh ginger, ground cinnamon, nutmeg, allspice, brown sugar, and molasses to the pot. Stir well to combine.
Toss in the whole cloves and cinnamon sticks, allowing the flavors to blend.
Bring the mixture to a gentle simmer, then reduce the heat to low. Let it simmer for about 20-30 minutes, stirring occasionally.
Remove the pot from heat and strain the cider through a fine mesh sieve to remove the spices.
Stir in the vanilla extract for added flavor.
Serve warm in mugs and garnish with fresh apple slices and a dollop of whipped cream if desired.
