1 lb large shrimp, peeled and deveined

8 oz linguine or spaghetti

4 tablespoons unsalted butter

3 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon red pepper flakes (adjust to taste)

1 lemon, zested and juiced

½ cup chicken broth (low sodium)

¼ cup fresh parsley, chopped

Salt and black pepper to taste

Grated Parmesan cheese for garnish (optional)

Cook the Pasta: In a large pot, bring salted water to a boil. Add the linguine or spaghetti and cook according to package instructions until al dente. Reserve ½ cup of the pasta water, then drain the pasta and set aside.

    Sauté the Shrimp: In a large skillet over medium-high heat, heat 2 tablespoons of olive oil and 2 tablespoons of butter. When hot, add the shrimp in a single layer. Season with salt and black pepper. Cook for about 2-3 minutes on each side until they turn pink and opaque. Remove the shrimp from the skillet and set aside.

      Make the Sauce: In the same skillet, add the remaining olive oil and butter. Sauté the minced garlic and red pepper flakes for about 30 seconds, ensuring the garlic doesn’t burn. Stir in the lemon zest, lemon juice, and chicken broth. Let it simmer for 2-3 minutes until slightly reduced.

        Combine Ingredients: Lower the heat and add the cooked pasta to the skillet, tossing to coat in the sauce. Add the reserved pasta water a little at a time to reach your desired consistency. Stir in the shrimp and chopped parsley until everything is well combined and heated through.

          Serve: Taste and adjust seasoning if necessary. Plate the shrimp scampi and garnish with additional parsley and grated Parmesan cheese if desired.
