Ingredients
  

1 baguette or sourdough loaf, sliced into 1-inch thick pieces

2 cups of mixed mushrooms (cremini, shiitake, and portobello), chopped

4 cloves garlic, minced

1 cup grated mozzarella cheese

½ cup grated parmesan cheese

2 tablespoons fresh parsley, chopped

1 tablespoon olive oil

1 tablespoon butter

Salt and pepper to taste

Optional: Red pepper flakes for a spicy kick

Instructions
 

Preheat your oven to 400°F (200°C).

    In a skillet, heat the olive oil and butter over medium heat.

      Add the minced garlic and sauté for about 1 minute, until fragrant.

        Add the chopped mushrooms to the skillet, season with salt, pepper, and optional red pepper flakes, and cook until softened and golden, approximately 5-7 minutes.

          Remove the skillet from heat, and stir in half of the mozzarella and all of the parmesan cheese until well combined; let it cool slightly.

            While the mushroom mixture is cooling, arrange the slices of baguette on a baking sheet.

              Spoon the cheesy mushroom mixture generously onto each slice of bread.

                Top each toast with the remaining mozzarella cheese for extra gooeyness.

                  Bake in the preheated oven for about 10-12 minutes, or until the cheese is melted and bubbly.

                    Remove from the oven and garnish with fresh parsley before serving.
