4 slices of sourdough bread

1 cup smoked Gouda cheese, shredded

1 cup cremini mushrooms, cleaned and sliced

1 medium onion, thinly sliced

2 tablespoons unsalted butter

1 teaspoon garlic powder

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

Salt and pepper to taste

1 tablespoon olive oil

Prepare the Mushrooms and Onions: In a skillet over medium heat, add olive oil. Once hot, add the sliced onions and sauté until they begin to caramelize, about 5-7 minutes. Add the sliced mushrooms, garlic powder, thyme, salt, and pepper. Cook for an additional 5-7 minutes until the mushrooms are tender and golden brown. Remove from heat and set aside.

    Toast the Bread: In a separate large skillet or griddle, melt 1 tablespoon of butter over medium-low heat. Once melted, add 2 slices of sourdough bread and allow to toast for about 2 minutes, or until lightly golden. Flip the bread slices and repeat with the remaining butter and bread slices.

      Assemble the Sandwich: While the second side is toasting, layer half of the smoked Gouda cheese on top of the toasted side. Add a generous portion of the sautéed mushrooms and onions on top of the cheese, followed by the remaining Gouda cheese, and top with the other slice of toasted bread, untoasted side facing up.

        Grill the Sandwich: Gently press down on the sandwich and carefully flip it over in the skillet (you may use a spatula to help). Cook for about 3-4 minutes, or until the bottom is golden and the cheese begins to melt.

          Finish Cooking: Flip the sandwich again and continue cooking for another 3-4 minutes until the other side is golden brown and the cheese is fully melted.

            Serve: Once done, remove the sandwich from the skillet and let it sit for a minute before cutting it in half to allow the cheese to set slightly.
