4 boneless, skinless chicken thighs

1/4 cup extra-virgin olive oil

4 cloves garlic, minced

2 tablespoons fresh oregano (or 2 teaspoons dried oregano)

2 tablespoons fresh parsley, chopped

Juice and zest of 2 lemons

1 teaspoon salt

1/2 teaspoon black pepper

1 cup cherry tomatoes, halved

1/2 cup Kalamata olives, pitted and sliced

1 cup crumbled feta cheese

Fresh lemon slices and parsley for garnish

Instructions
 

Marinate the Chicken: In a large mixing bowl, combine olive oil, minced garlic, oregano, parsley, lemon juice, lemon zest, salt, and pepper. Whisk together until well blended. Add the chicken thighs to the marinade, ensuring they're evenly coated. Cover and marinate in the refrigerator for at least 30 minutes (or up to 2 hours for more flavor).

    Preheat the Oven: Preheat your oven to 400°F (200°C).

      Bake the Chicken: Remove the chicken from the marinade and place it in a baking dish. Pour the remaining marinade over the chicken. Scatter the cherry tomatoes and Kalamata olives around the chicken thighs in the dish.

        Add Feta: Crumble the feta cheese on top of the chicken and vegetables evenly.

          Bake: Place the baking dish in the preheated oven and bake for 25-30 minutes or until the chicken is cooked through (internal temperature should reach 165°F or 75°C) and the feta is slightly golden.

            Garnish and Serve: Once baked, remove from the oven. Garnish with fresh lemon slices and additional parsley if desired. Serve the chicken on a platter with the roasted tomatoes, olives, and feta cheese, drizzling any pan juices over the top.
