4 chicken thighs, skin-on and bone-in

1 cup cherry tomatoes, halved

1 red bell pepper, sliced

1 yellow bell pepper, sliced

1 red onion, cut into wedges

4 cloves garlic, minced

1 cup Kalamata olives, pitted

2 tablespoons olive oil

1 teaspoon dried oregano

1 teaspoon dried thyme

Salt and pepper to taste

Juice of 1 lemon

Fresh parsley, chopped for garnish

Feta cheese, crumbled for serving (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare the Marinade: In a small bowl, mix the olive oil, minced garlic, oregano, thyme, lemon juice, salt, and pepper to create a flavorful marinade.

      Marinate the Chicken: Place the chicken thighs in a large bowl or resealable bag, then pour half of the marinade over the chicken. Make sure to coat the chicken well. Allow it to marinate for at least 15 minutes (or up to 2 hours in the fridge for more flavor).

        Prepare the Vegetables: On a large sheet pan, spread out the cherry tomatoes, sliced bell peppers, red onion, and Kalamata olives. Drizzle the remaining marinade over the vegetables, tossing to coat evenly.

          Arrange the Chicken: Nestle the marinated chicken thighs on top of the vegetable mixture, skin-side up.

            Bake: Place the sheet pan in the preheated oven and bake for 30-35 minutes or until the chicken is cooked through (internal temperature of 165°F/74°C) and the skin is crispy.

              Garnish and Serve: Remove the sheet pan from the oven, and let it rest for a few minutes. Garnish with fresh parsley and sprinkle with feta cheese, if desired. Serve warm, spooning the delicious vegetables and pan juices over the chicken.
