Ingredients

1 pre-made pizza dough (or homemade)

1 cup fresh baby spinach, washed and dried

4 cloves garlic, minced

1 tablespoon olive oil

1/2 cup ricotta cheese

1/2 cup feta cheese, crumbled

1 cup mozzarella cheese, shredded

1 teaspoon dried oregano

1/2 teaspoon red pepper flakes (optional)

Fresh lemon juice (from 1/2 lemon)

Salt and pepper to taste

Zest of 1 lemon

Instructions

Preheat the Oven: Preheat your oven to 475°F (245°C) or according to the pizza dough instructions.

Prepare Spinach and Garlic: In a medium skillet over medium heat, add olive oil. Once the oil is warm, add the minced garlic and sauté for about 1-2 minutes until fragrant but not browned. Stir in the baby spinach and cook until just wilted, about 2-3 minutes. Season with salt, pepper, and lemon juice. Remove from heat and set aside.

Roll Out Dough: On a floured surface, roll out the pizza dough into your desired shape (round or rectangular) and thickness. Place it onto a pizza stone, baking sheet, or pizza pan.

Spread Cheese: Start by spreading the ricotta cheese evenly over the dough, leaving about a half-inch border for the crust.

Add Spinach & Feta: Evenly distribute the sautéed spinach and garlic mixture over the ricotta layer. Sprinkle crumbled feta cheese over the spinach.

Top with Mozzarella: Finish by adding shredded mozzarella cheese on top, along with dried oregano, red pepper flakes, and lemon zest for an extra zing.

Bake the Pizza: Place the pizza in the preheated oven and bake for about 12-15 minutes, or until the crust is golden brown and the cheese is bubbly and slightly browned.

Serve and Enjoy: Once done, remove the pizza from the oven and allow it to cool for a couple of minutes. Slice it up and enjoy the delicious flavors of this Greek-inspired white pizza!
